When America's space program began to look for astronauts, it initially turned to fighter pilots, finding in them men who could remain calm in the face of fear and uncertainty and solve intensely complicated problems in disarmingly simple and effective ways. About the Author
Don Henry gained a unique perspective as a combat fighter pilot, squadron commander, and psychologist. He writes about the inner conflict and mortal spirit of people who find themselves in extraordinary circumstances. Don, a former Air Force Colonel, logged thousands of hours in supersonic fighter aircraft and commanded a first line fighter squadron. He flew 129 combat missions in F-105s over Laos and North Vietnam. His combat decorations include the Silver Star and three Distinguished Flying Crosses. He lives and writes in Laguna Beach, California.

Thud combat in technicolor!

I'm slowly savoring the literature of the F-105 Thunderchief; the ultra-lead slead: the "Thud." The F-105 was a remarkable aircraft in so many ways; it was a technological masterpiece, the apex of late 50s supersonic aircraft design. Everything about it was cutting edge; from its flight computers, to its airframe (which actually changed significantly over the short lifespan of the aircraft, due to new knowledge about supersonic flight). It was designed for a very specific, very short-duration nuclear deterrent role in europe, and used in almost the exact opposite way. The Thud was designed to supersonically deliver a single nuclear weapon to tactical targets in a rapidly changing european theater of war; there was no plan for, say, long term maintainance. In Vietnam, it was used to deliver multiple conventional weapons in a precision manner on heavily defended strategic targets; day, after day. It wasn't very good at it. The analogy I like to draw is that was like using a high end Caddilac with a bazooka duct taped to its nose to fight against Soviet tanks. As such, it was the bloodiest machine since the B-17 in WW-2. If you pulled F-105 duty over Vietnam, your chances of survival were about 50/50. As such, the stories of the tough, moustached men who relentlessly fought in these machines fascinates me.

Colonel Don Henry's novel is a (probably heavily) fictionalized version of his experiences in the war. It contains many of the touchstones of the actual men and machines; right down to Roscoe the dog at the 388th wing in Korat. The feeling and atmospherics are what really makes this book sing. Many of the other memoires tell similar stories, but the fact that he was allowed fictional license really added color to the story of Thud pilots. From the humid teeming jungle; to the brutal heat, idling on the runway, breathing the exhaust fumes of a squadron of Thuds; to the brilliant scene when the flight of Thuds emerges from a thunderstorm: there is vivid descriptive beauty and color in his tale. It is a story of fire, gore, wind and women; and he evokes them all in palpable ways. Some of the images were so powerful, I suspect they will stay with me for many, many years. There is also great emotional intensity between the two novel's protagonists. It is one of those great archetypical stories, of guru and young buck, and the passing of the warrior badge to the new generation of chevaliers.

I'll be honest, some of the things which happen in the novel are pretty unbelievable, and even cheesy. Knowing how life operates, these are probably closest to being actual fact. For example, the various "love stories" came off as sort of contrived and overly old fashioned to my modern Berkeley sensibilities. The thing is, when I talk to people who were in that war, like, say, my dad, that's more or less how things were. As such, it's more likely an encapsulation of something real; reminding us of the way romance was in more innocent eras.

If you want to read an actual memoire, read something else. If you want to experience the color and ardor of a man's time as a Thud driver in Vietnam, this is the book.

A fast-paced account of the Right Stuff

Thunderchief is a novel about the making of a fighter pilot. The story follows the trials of Lt. Ashe Wilcox, a rookie Air Force pilot flying the Republic F-105 fighter-bomber in combat missions over Vietnam. The author, himself a decorated veteran combat pilot, provides a gripping story the gamut of physical and psychological stresses associated with war in the air. There are harrowing missions, evasion, losses, doubt, self-examination, exhilaration, comedy, irony, sadness and valor; in other words, everything one might expect from a well-written war memoir. That this particular work is a novel should not deter those interested in military history, nor those interested in the psychology of warfare and warriors. The story reads like an authentic chronicle in all respects, and I doubt you will be disappointed with its scope and message.

Thunderchief starts fast and escalates from there. Don Henry hits the target with this narrative; I hope there are more fighter pilot tales to come from this author!

Great Novel From A Great Pilot And Patriot

In "Thunderchief" former USAF fighter pilot Don Henry chronicles the molding of a young fighter pilot, First Lieutenant Ashe Wilcox, into a mature warrior and leader flying the mighty F-105 from Takhli RTAFB, Thailand in the awful year of 1966. Ashe (who reminds me of real-life hero Karl Richter, a close personal friend of Henry) is mentored by a somewhat spooky former POW who only answers to the name "Hunter," and is a full-blooded American Indian, which makes the title of the book into not only a description, but a clever play on words.

I read the book straight through in one sitting, and enjoyed it immensely. Although fiction, many elements of fiction only serve to obscure specific people: there is no doubt that this book feels definitely authentic, and far better than most war fiction. I found the characters and situations encountered compelling and intriguing, and found the account of the aerial actions highly readable.

I only have a few quibbles with the book, all of which pale in comparison to the outstanding qualities the book has. I found the "Indian" references occasionally heavy-handed and pushing the limit of being believable. Clearly the Hunter character is central to the story, but some of his personality traits and behaviors seem like contrived plot points rather than natural and realistic characteristics of a true warrior and fighter pilot. I found the conclusion to be predictable, even though it was well written: the foreshadowing was unmistakable since the first time the subject of Hunter's obsession with the Doumer bridge was brought up very early in the story. Having said that, the character of Hunter serves as a model for Ashe and in that role is very effective. I especially found the Epilogue to be an ingenious method of revealing an intriguing conclusion: Henry clearly crafted the last two pages very carefully, and he got them exactly right.

Although I have to admit that I would have preferred a similar book of historical nonfiction from Henry (the Broughton and Rasimus books are my favorite books on war ever written, perhaps my favorites of all time) this is an excellent and exciting book, and I recommend it without reservations.

Rawia, in Arabic, means storyteller. And that is what I am. I tell the stories of my life's journey, culture, and family through my cooking. A delicious meal is the greatest companion to the memories we cherish most. I was born into a food-loving Palestinian-Arab family in Nazareth, a beautiful town in the southern Galilee. Though the words “organic,” “locavore,” and “sustainable” were unknown then, my parents' approach qualified on all counts. My respect for the sources of food, how it is grown and prepared, originates in my early years at home.

My grandmother had ceramic urns filled with fruity olive oil, pressed from the trees on her family's land picked by my aunts and uncles. My mother, too, made her own olive oil, and used the remaining “crude” oil to make soap; she also distilled her own vinegar, sun-dried her own herbs and fruits, made fresh batches of goat cheese, as well as sweet wine from our vineyards, and jarred jewel-colored jams from the bounty of the local orchards.

After moving to New York, I opened my restaurant Tanoreen to honor my mother and her imaginative cooking as well as the rich Middle Eastern gastronomic culture that is rarely experienced outside the region. Tanoreen is unique because it showcases Middle Eastern home cooking as I experienced it growing up. The 135 recipes in this book celebrate tradition and embrace change. I cook without rigidly following recipes, though I do respect tradition. My dishes are based on our culture's recipes that are flexible enough to accommodate both adventurous and conservative contemporary palates.

Organized by Breakfasts, Mezze, Salads, Soups and Stews, Main Courses (including vegetarian, fish, chicken, lamb and beef), Sides, Pickles and Sauces, and Desserts, in each chapter I maintain the authenticity of a dish, re-creating it as it has been made for generations; but sometimes I might opt to experiment a bit, to make the recipe more contemporary, perhaps adding a spice or offering a few shortcuts. My favorite examples of these are my preparation of Brussels Sprouts with Panko (and tahini), Spice Rubbed Braised Lamb Shank (marinated in ginger and rose buds), Tanoreen Kafta Roll, (a reconstructed classic) or Eggplant Napoleon (baba ghanouge layered between crisp eggplant and topped with basil and tomatoes). So, I was thrilled when I finally got my hands on her cookbook, and the secrets behind the delectable dishes I’d eaten at her restaurant. The recipes for my favorites turned out to be shockingly easy, 5-ingredient affairs, and as I flipped through the pages of mouthwatering photographs and lovely asides about local culinary folklore and her own food memories, I also discovered simplified recipes for many Palestinian classics. For example, her recipe for Musakhan, a complicated festival dish of sumac-rubbed roast chicken served on rounds of fresh-baked taboon bread, is transformed from weekend project to weeknight meal with a simple pizza-like flatbread recipe and smart substitutions like quick saut�ed boneless chicken breast. Bishara’s modern, approachable take on classic Palestinian food makes Olives, Lemons, & Za’atar a book I’m glad to have on my shelf as a source for doable, exciting dishes and tried and true favorites that I will be reaching for again and again. I know it sounds over the top to say a recipe was life-changing, but Eggs with Za'atar? Life-changing. You see, I often find eggs totally unappetizing yet force myself to eat them because they give me energy. Choking down eggs is not fun and I've really been struggling with breakfast lately. But as soon as I tasted these eggs, I wanted seconds. I think about them all the time! The recipe is basically eggs in a basket topped with savory za'atar and tangy sumac—so simple yet so flavorful. Eggs with Za'atar captures what I like most about the cookbook: the easy ways that everyday, home-cooked ingredients can be transformed with a sprinkle of herbs, spices, and Middle Eastern condiments. Roasted cauliflower is dressed up with tahini and pomegranate molasses. Saut�ed kale gets an aromatic hit of coriander and cumin. Boiled beets become exciting with pesto and fresh herbs. Za'atar, sumac, pomegranate molasses—these are things I already had in my pantry and it was fun to discover new ways to use them. With its focus on home cooking, the scope of this book goes much deeper than typical Middle Eastern restaurant fare in the US. I really appreciated Bishara's approach, which is not 'rigidly authentic' but rather defined by 'creative flourishes.' The recipes in her book honor tradition while keeping things fresh. As a result Olives, Lemons & Za'atar may be useful to a range of cooks who are more or less familiar with Middle Eastern cuisine, looking for classics as well as new inspiration. I've been to Tanoreen just once, but Olives, Lemons and Za'atar makes me want to run right back. In all honesty, it's worth buying this book just for the chapter on breakfast. Could there be any more perfect way to start the day than eggs with za'atar, the addictive Middle Eastern blend of wild thyme, oregano, sesame seeds and tart sumac? Maybe tahini yogurt with cumin-spiced chickpeas and flatbread, also in the chapter, tops it. And then there's the mezze chapter with its flurry of dips, savory breads and a pickly things. What I love about Bishara's approach is that it's not at all dogmatic—she's a joyful and intuitive cook. For example, she shares her mother's recipe for a hummus without tahini, which could seem like downright blasphemy to some, but to her, it's a nice lighter, brighter alternative. Beautiful but ran into some problems with the recipes

I'm familiar with food from this region and was really excited about trying out some of her recipes. The cookbook is beautiful. Unfortunately, I found problems with some of the recipes I tried. I *have* to think that this is something to do with the editing and not the real recipes because in some cases, the instructions just seem wrong.

Examples
(1) The recipe for split pea soup (shorabit bazzela, page 89) says to add **15 cups of water** when the soup only contains 2 cups of dried split peas (and only 1/2 tsp salt). Even if you add 10 cups of water, you'll end up with a really watery, bland soup - not the slightly thickened soup shown in the picture. I had to reduce the liquid A LOT and add more salt to make it look and taste right.

(2) Beet salad (salatet shamandar, page 69) was too oily even with half the oil added and the instructions, which say "toss to coat", will not reproduce the beautiful salad in the picture.

(3) Rice and vermicelli pilaf (page 182) says to use 1 lb of vermicelli. I used 12 oz and it was too much. There is also no way that 1 lb vermicelli, 4 cups rice, and 9 cups water will fit in a "medium pot". I had to switch over to the biggest pot I have.

(4) Okra with tomatoes (bamya belzait, page 180) came out ok except I added half the lemon juice and half the oil but that's just personal taste, I suppose.

(5) The hummus recipe (page 36) was good but I did add less garlic and lemon juice which is just a personal taste thing.

I regularly use other people's recipes without a problem but I had to struggle with the ones in this book. If you follow the instructions exactly, you will run into some issues. I highly recommend checking it out from the library first, if you are thinking of buying it.

Tanoreen Forever!

Full disclosure - I have been a loyal customer of Rawia's incredible Tanoreen restaurant since the old days when it occupied a tiny storefront. It remains a favorite of my friends and family and "must" for any visit with us. It defined the "Brooklyn" brand long before the hipsters got hold of it.

When Rawia shared with us that a cookbook was in the works, I was very excited. And the fruit of her labors does not disappoint. The book is as beautiful and warm as the woman and I cannot wait to start cooking and experimenting. Somehow, I doubt that my versions will move those at my table to the stunned silence that overtakes guests at Tanoreen, but I will give it my best.

Some things worth noting: while the recipes look well-written and fairly precise, options are given for cooks with limited access to some of the specialty ingredients and suggestions are given for playing with the flavors. (I like books that understand the limitations of a home kitchen). Wonderful tips pepper the book throughout, along with personal stories and memories that give great color to the book and make it very readable.

So far, I made the scrambled eggs with halloumi, to great success. I'll never be the great chef that Rawia is, but no matter where life takes me, I love that I have a piece of Tanoreen to take with me.

Good but restaurant-sized proportions

There are some really good recipies here, the Arabic bread, the feta salad, the hummus, for example. But often the recipe amounts are huge, particularily for the desserts. The flower-scented custard...requires a cup of cornstarch and a teaspoon of mastic (I have never used more than a couple of grains of mastic, which is very bitter when used to excess). Even the bread requires 6 cups of flour, and you wind up making bread all day. If you have a small family and don't entertain a lot, be prepared to scale down the amounts A LOT!

Re's thinking combined two strands: a pessimistic conception of human nature, presented in the French moralists' aphoristic style that would become a mainstay of Nietzsche's own writings, and a theory of morality derived from Darwin's theory of natural selection. Re's moral Darwinism was a central factor prompting Nietzsche to write On the Genealogy of Morals and the groundwork for much of today's Evolutionary Ethics. In an illuminating critical introduction, Robin Small examines Re's life and work, locating his application of evolutionary concepts to morality within a broader history of Darwinism while exploring Re's theoretical and personal relationship with Nietzsche. challenges the myth of Nietzsche as a solitary thinker.
